Sorry it took so long to get this post up. The beer is sitting in it's primary nice and happy! :)

All went very well. No problems with the brew itself. I was a little shocked that we started and 10am and ended at 3pm - kinda fast :| A couple of items that I would contribute to the speed.

I utilized my hostwater heater for the starter water - 156f - this helped getting things going :)
As we sparged, after I got about 1 inch in the bottom of the kettle, I kicked the heat on the boil. As soon as the sparge was complete - we had a rolling boil
We utilized a pump to push the wort thru the plate chiller, usually we have to WAIT FOREVER for the kettle to drain. The pump sucked it right out!

In the future, I plan on doing direct heating of the mash, and pumping into the sparge with a float switch, we'll see how it works ;) Long term going to try to do some type of rims system to maintain the heat.

Attached it the complete reciepe and notes to date. But also here is the reciepe as I brewed it this time.

It's basically a reciepe that a fell by the name of CJ made up and he lives in Japan. It's very much like a IPA, but the hops are a little higher than the IPA style guidelines.

I'm bottleing some up this weekend and will drop a couple of bottle by next week for you to taste. The hop additions are a little crazy and the amount of hops are a bit nuts as well.

Cool, thanks! Remind me to tell you about the IPA I made with a mere 8 oz. of Columbus hops in 5 gals. of wort. Green I tell ya!

Jay -

Do you dry hop your JPA? I brewed one on Saturday, but because of the split boil (2 pots, 1 stove) and all of the hop additions that I had to split for myself from 1.5 oz bags, I didn't have as much left for flavor/aroma hopping as I would have liked. I'll probably dry hop, but I haven't figured what to use yet. My gut is to use the Cascade/Amarillo/Centennial combo that's used in the brew, but I don't know if that will be too citrusy. I'm not crazy about grapefruit juice...

Thoughts?

My suggestion would be to dry hop it just slightly with 1 hop. Which ever you choose, just make it in a low enough dose that you can add additional or add a different. One thing about dry hopping, if you undershoot the amount, you can add more - if you overshoot, well it's only time...
