I don't have a name for this yet, and I will ask Jay to post up the final recipe version (magnum hops became galena and a few other little changes). But we managed to pull 9 gallons or so out of the boil kettle, there was much more in there, but we (I) impacted the shirron trying to pull all the hops and everything out with the wort. So without a filter on the boil kettle, the trub came'a'flowin! I think I owe Jay some PBW :) and some beer.

We hit 1.089 without the DME, I pitched 2 packs of S-04 in each fermenter last night, and right now the krausen in the blow off tube(s) and the water bucket is amazing, the bucket has a head on it to be awed by, and the aroma is great.

Now the bad news: I don't think Jay will want a bottle after the ruination he tasted last night. To all that try it, heed the label and drink it last, I was tasting hops with my pizza....and there was no beer around.

Thanks again to Jay for letting us use his setup and learn to do step mashes etc. Very cool.

I had a great time and can't wait to be passed one of those bottles! Make sure to save a couple for years from now for the big occasions! :)

Yeah, it was great to see how to do step mashes. I'm not quite ready to do it yet, but it certainly was fun!

Hey, be sure to keep an eye on that bucket...after a week or so of blow-off they can get a bit funky in their own right!!

1.025 on the hydrometer, thats 8.25% (give or take) we are doing well.

nice malt backbone, a subtle hop character in the background that doesn't hit until the sweet dies off... gotta dry hop it when I get back from ABQ

one carboy shows 1.025, the other shows 1.028ish. I blended the 2 by racking to secondary in 2 other carboys.

Let the DRY HOPPING BEGIN :)

after blending again and put into kegs for storage (instead of on the dry hop) I have to say the taste is close, its a hop monster for sure, very happy with this one. Both kegs were around 2/3rds full so I have 7-8 gallons of this stuff to pass out in march.
