I plan (as of now) to do a single infusion mash at 152. I was going to step it, but Derek (and others) suggested it was more trouble than it was worth with the Maris Otter... If I had a direct-fired mash tun, I'd definitely give it a go, but as it is, maybe I'll have enough to think about without adding any hassles. Besides, it's been a while since I've brewed, so I'm not sure I'm still on my game. Oh, and this will be the first time I use my Shirron. Oh, and a new kettle. Yeah, I've got enough to worry about...

Well, the brew's bubbling along quite happily in my room, but the brew session wasn't all sunshine and lollipops. Now, admittedly, the problems were minor, but worthy of note. First, I had to abandon my plan for a split batch (1026/1028) because the 1028 I picked up wasn't showing enough life to instill me with any great measure of confidence that it was in fact viable. (I should note - 12 hours later after the brew was in the books the 1028 was finally looking "ready" to me, but that was 12 hours too late, and a mere 36 hours after I started the starter... THAT, my friends, was a "busted starter") So, I went back to plan A, which was pure 1026 (thanks, GG). That starter had done VERY well, in the time that the 1028 did nothing, so I felt good about it.

The other issue was that I didn't evaporate NEARLY as much as I would have hoped, mostly because the boil wasn't as strong as it could have been, since this was the first full-volume, single-pot boil I've done. My stove brought it to a boil, but it was not the most convincing boil ever, until I slid the pot over 2 burners, both at full-blast. Hopefully, I didn't miss out on the protein-coagulating benefits of the boil... As a result of the lesser evaporation, I had to boil longer than expected to get my gravity close to where I wanted. At the end of the day, I ended up at around 1.060, because I actually came in about a gallon more than I wanted. The good news there is, even with the added boil time, I came in at 65 IBU's, not over 70, which is nice because I didn't want a tongue-splitter on this thing.

I did tweak the recipe a little more (more due to error than anything else), by swapping the first 2 Chinook additions for whole hops. The hop additions ended up being 80/70/25/0 instead of 70/60/15/0. We'll see what that does... There are people who claim that flavor hops don't do much anyway, so hopefully I won't have just a bitter, smelly beer.

All in all, pretty good. We'll know for sure in about 3 weeks, though, right? One thing's for sure, I *definitely* need to get myself to a place where I can brew outside, because I have a turkey fryer that's CALLING MY NAME.

hey hey! Glad to hear that the 1026 worked out for you! Make sure you harvest some after the batch is through!

Oh yeah, the finishing of the beer might take a bit in the end (I'm trying to remember here...I think Jay confirmed it too). It'll go really active and then kinda simmer for a good while to finish the beer. But that's alright, the beer tasted great in the end! (just rouse the heck out of it everynow and then!)

Glad to hear it all in general went well! I've got a new pot on the way and I'll then be making a foray into the world of full boil apartment brewing again...maybe its time to make some heat sticks!

I sort of abandoned this beer here, so I wanted to post an update. I've had a few bottle of it, and just put the Party Pig into the fridge this morning. I don't know how well it would travel in the Pig, so I'm just planning to bring a bomber on Thursday (if anyone knows that the Pig would travel well, I'd be happy to bring that, instead).

As far the beer, I think it's good. Very tasty, if a little "different". I didn't get a strong enough boil, and forgot the Irish moss, so it's as cloudy as any beer I've ever drank. The flavor is nice... A little bit sweeter than I'd anticipated, but that's probably the result of missing my mash temp a few degrees high. Not cloying, though, and definitely quaffable. I really like the hops... I'll definitely be brewing this one again, but maybe not for another few months. I've got a lot of beers I want to make soon. Then again, this is my first beer that's MY beer, so it may move up the list a bit so that I can tweak it to "perfection". (Ri-i-i-ight...)

I can't wait to have you guys give it a taste, and give me your thoughts on this thing...
