I think it was probably released about a month early (as compared to a standard Czech brewing timeline), so it should peak in the next week or two, if it makes it that long...

  • hopmonster: The right guy answered as I brewed 2 pilsners in 25 years, but Scoot manages that liquid gold at LR. Between blending gains and hops, DMS would be very hard to detect in most of my applications.

  • scootertig: "need" may be a bit strong, but it's definitely a good practice. If you've got a vigorous boil, you'll be fine with 60 minutes. 90 minutes is good for the DMS precursors, of course, as well as development of melanoidins.

  • hopmonster: Fromthe always something to learn catagory, I never knew that you need to boil for 90 minutes with pilsner malt (grain/not extract). I generally go 75 with small beers, and I use a lot of pilsner blended so I am probably ok, but the deal is driving off DMS compounds. I never knew.

  • hopmonster: I think that the Mitch singnal is interesting on 2 fronts: 1) he told me about this a year or two ago, and may have purchased one, and 2) using it with a cask should draw his ire.

  • RobFrye: alubel: I've seen a similar device used in casks (including Adroit Theory). Mitch, got any comments? I would think that if you keg cloudy beer then you'll get gunk either on the first few pints the regular way or the last several pints with that floater.
